Science
My kids haven't been heavily into science or planning to go into a science field, so we haven't used much upper level formal science programs. They still did ok in CBC science classes. We read lots of science fact and animal books from Usbourne and National Geographic and creation scientists. I'm just beginning to get into the Apologia science books for elementary ages which might be ok for middle school too.
Unlocking the Mysteries of Creation is my favorite for a creationist arguments overview. It Couldn't Just Happen is good too.
Rainbow Science is my favorite 'program' for science. Humorously written for about 7th -8th grade and gives a good overview of chemistry, physics, and biology. Expensive, but everything is included for experiments and labs. Christian, but is neutral on age of the earth. Only formal study that my non-science oriented teens had before taking science classes at CBC. We read it aloud and did the labs all together because my oldest is an auditory learner. It worked well for that.
Apologia Chemistry seems very understandable, but I haven't used it yet.
Biology 101 is a very good creationist perspective video course in biology. This is done like a nature video. Just pop in and watch! Comes with printable study guide for more formal study. Perhaps all the high school biology a non- science major needs. Timberdoodle has the best price on this.
